As long as he's wearing the necklace he will take a human form, the necklace's magic forces him to take a human form so he cannot switch to his Mermaid/Natural form while wearing the necklace, He's stuck in human form while he wears it essentially 

The only way to way to get back to his Natural Mermaid form is to take the necklace off

Ripping the stone from the necklace would also cause him to revert back to his natural form
