The Assistant is a character that helps you with offering items. He usually has its own empty area beside the dealers door which lets the player buy its "special services", this includes special bits, advice, and even cheating.
While its pretty useful when trying to win Buckshot Roulette, be warned that he is not as trustable as he may look like. There will be times where the Dealer pays Assistant to remove your equipment or randomly cuff you. chances may range depending on your situation with him, so be nice.
