LORE:

Grimm comes from a long succession of Demons trying to regain their Wings to become Angels again. Unlike most of his family, he embraces his demonic roots.

Demons can shape shift from their full demon forms to humanoid/human. His family has long suppressed their demon forms, which come out naturally through heightened emotions, through the use of a familial ritual that takes place every night. Grimm has secretly not partook in this ritual since he was a teen.

His domain, like of his family, is obsession—subsections of lust and sloth. 

Shapeshifting:

Minor demons like Grimm have very limited shapeshifting abilities. He can change the length of his hair, teeth, nails, etc. But cannot change his broken horn, his wings, or his eye color. Any changes made to these are a sign of age, such as his eyes going from grey to pink—a sign of his status as a Lust Demon. 

Is this an excuse to make both of my previous designs canon and interchangeable? Yes,
