The Ultimate Food Critic, Albert has a knowledge of which flavors go together and which flavors don't.

True to the title, Albert is very picky over how flavors combine and how each food in a meal tastes in relative to the other foods. Talent aside, Albert is surprisingly quiet, not really talking much unless he is dragged into the conversation. He also doesn't talk much about his talent, as if he didn't really want to be known as the Ultimate Food Critic. He claims it's because no one really bothers with critics all that much nowadays, but he also shows a mild paranoia when he is asked to critique a meal.

Now, why is this?

Well, critics aren't always the most well liked people, and Albert was no exception. Finding this knowledge of food flavors at a young age (despite not cooking all that much), Albert had intended to use his talent to help cooks all across the USA, but he learned fairly quickly that not everyone appreciates his desire to help. In some cases, cooks tried to kill him by poisoning the food he was to critique. He was lucky enough to not die in any of these cases, but he had brushed with death twice, as the poisoning was serious enough to warrant a hospital visit. As these incidents occurred, Albert grew paranoid, and often would decline trying a meal unless he either got a serving himself. While he wanted to get out of the world of critiquing (as it was starting to get dangerous for him), he couldn't exactly find anything else he was good at, and as such, was pretty much locked into this world he thought was a slice of heaven (bad puns ftw) but had turned into a flurry of hell. Hope's Peak saw his skills and invited him with the title of Ultimate Food Critic.

-In some cases, he had gotten food poisoning later on after trying a meal. As such, he sometimes doesn't know where the food poisoning came from, but he does keep a journal of which places he was at, so in the event of a poisoning, he tends to avoid all of those places unless they absolutely need his help.
-He was once asked to critique a new meal being tested in the Lockwind Lounge, which was designed by the soon-to-be Ultimate Chef, Illia Lockwind. While it was a good meal overall, Albert felt that one of the flavors (namely the flavor of the biscuit) clashed too much with the flavors of the rest of the meal, and as such he rated it a 4 out of 5. This angered Illia, as many of the other critics liked the meal as is. As a result, she hates Albert, and he doesn't understand why that is (as she asked for his honest opinion, and he gave it to her).
