Things I use to describe them:
G&S: Gender/Sexuality of the character 
Pronouns: The pronouns that they use
Age: Their age. Specific when applicable
Species: The species of the character. May or may not be fictional
Additional notes: Details about a character's personality, appearance, backstory, etc

Notable tags I use:
 F: These are characters I prefer to receive art of in gifts, trades, etc.
N: Characters I expressly do not want to receive art of
Minor: Underage. Do not ever draw nsfw/suggestive art of them
