1. He actively encourages obedience, so traitors are a big nono! Getting too close to monsters is a very very bad thing that warrants exile at best in his eyes.
2. Not by any conventional means. Monster bodies are made mostly of magic so physical damage doesn't do much. Poison does basically nothing. They usually don't age and don't need to eat or drink anything. Not to mention, they are very good at using magic so they can easily attack back if you attempt anything.
3. Guardians can have partners! It's generally assumed that new parents will temporarily step down from guardian duties to care for their kids but just having a partner is perfectly fine
Midnight ages! Basically your apparent age is tied to your sense of self (your spirit) so if you develop as a person you will age. its not tied to time as much so im iffy on calling it 'aging' definitively

"usually"? Does that mean that sometimes they can age? i would imagine it would be very. VERY slow though. and and VERY rare thing too?
