<p> stands for paragraph, the <p> element is meant for a paragraph of text-based content.
a <div> on the other hand is a container element, which is why you'll see it being used to wrap other elements.
so you might see something like:
<div class="bg-faded card-block">
<h2>section heading</h2>
<p>paragraph of text. lorem ipsum sit amet, consectetur adipiscing elit...</p>
</div>
but you probably wouldn't see this:
<p class="bg-faded card-block">
<h2>section heading</h2>
<div>paragraph of text. lorem ipsum sit amet, consectetur adipiscing elit...</div>

displays are a set of bootstrap classes, and you can add class="display-1" to an element like this: <h2 class="display-1">heading name</h2>
to apply the display formatting. display classes go from display-1 to display-4, like it says in the op
to add a colour to a display, you can use one of these bootstrap classes or inline css.
BS class:
<h2 class="display-1 text-primary">heading name</h2>
inline CSS:
<h2 class="display-1" style="color: #HEXCODE;">heading name</h2>
