He used to be straight (i was like 15-16 at the time), but after he got with this one lady in an rp group years ago i realised you know what, this not for him, mans was meant to be with another man (specifically his childhood bestie). Now he's gay and happy
I had this happen for the first time with one of my Ocs (I changed it like 4 times 😭 I was kinda worried someone could've noticed;;). I'm thinking of having it as part of his story where he just discovered more about himself overtime. Since he's a type of Sona it was just me changing it alongside myself, I just wanted to have an Oc to share the same sexuality with so thats why.
It doesn't have to be a Sona, I'm curious if this has happened with anyone Oc related? I don't normally give my Ocs a sexuality unless they are planned to get a partner or I'm 100% sure but most of the time I don't really think about it.
I'm curious if this has happened to other people before?
This man over here has lived such a long lifespan, and has been in so many relationships, both toxic and otherwise. It's safe to say that their sexuality is pretty ambiguous.

....I thought he was straight when I first made him, then over time I started questioning it when I considered how he interacted with others.
It took awhile to realize it but I eventually settled on him being bi, albeit in the closet about it
He at first thought he was Pansexual, to today he identifies as Aro Pansexual but nowadays he thinks he is Aro Pan and somewhere on the Ace-Spectrum. He always forced himself to enjoy sexual things because ""it's normal/avarage"" and due to other things in his past. But nowadays he and his friends noticed that he actually doesn't enjoy it as he always pretended.
Off topic rant: but once I found out some years ago that I am on the AroAce-Spectrum I noticed how much my character are AroAce-Coded without even noticing it. I think it's cool to see how much OCs can change too or reflect a person.
Rikano used to be AroAce but idk,, I kinda like her being Bisexual/Pansexual - maybe I'm projecting lol

Sometimes it's a character that just hadn't had feelings for anyone, so I just randomly choose and then later on I properly think about it or as I develop the character it comes naturally to me that I was wrong about it.
Sometimes I have it set, but then 2 or more characters give me vibes when writing some part of their story and I change it to allow myself to develop their relationship.
Sometimes it's for plot.
Sometimes it's similar to your situation, I just project onto a lot of my characters, use some for personal exploration and I just like having them share traits with me, attraction and gender included.
There's also a few cases of "i knew this character was this, but i didn't want that, so I forced it to be something else and later on realized I could not keep pushing that and turned then back to what felt right", that has happened with some OCs gender as well, lol
