Despina walked home quietly thinking about what she would make for the Faire. She could make a crumble, or a warm sponge cake or macarons. She decided on a more simple recipe that she'd learnt from the palace, Lemon Syllabub. A simple yet sophisticated dessert.

She collected some ornate dessert glasses and small silver spoons, stashing them in her shawl. She then gathered the Lemons, cream and sugar, placing it all on the workbench, she began working on her dessert. She carefully warmed the lemon juice and sugar before adding to the beaten cream, continuing to whip it up to a fluffy mixture.
Once the ingredients were combined, she scooped the mixture into the glasses, forming it into a swirl-like shape. She flitted around arranging the lemon swirls and sprigs of mint. 

When she was finished she smiled with satisfaction, pleased with her desserts. Leaving her shawl behind. She asked her mother to help her balance them on her back and nose as she walked back to the Faire.

Dad's Lemon Syllabub:

4 servings:

Ingredients:
2 unwaxed Lemons. (waxed lemons can be warmed in water to remove wax)
2 tbsp Caster Sugar.
500ml Double Cream.
Any decor - I use mint and lemon zest.

Squeeze out the lemons, warm the juice in a saucepan and stir in the caster sugar, make sure it's all dissolved. 

Start whisking the double cream, as it starts thickening add lemon syrup, Slowly!

Keep going, after adding all the syrup, till it's fully whipped. 

Serve in ornate glasses, add any décor you like;

I usually take some swirls of lemon peel and sprinkle on the top and add a sprig of mint. 

You can add a biscotti, some sugar lemon pieces, anything really as long as it’s dry and not too heavy. 

Best eaten with a small spoon.

This recipe is super easy but looks refined and is very yummy.
