Kalipso is a peryton, a stag/bird hybrid similar to the more popular griffin.
Kalipso's front half is very basically the same as a stag, except for a mouthful of sharp teeth.
The back half is based on a turkey, a fact further supported by the rust colored plumage that he maintains in the autumn season.
In the spring, he molts the drab color for a bright green and blue color scheme. (The in-between times are a garish mess.... he doesn't talk about the in-between times.)
His horns, hooves, and bird legs stay the same color all year.
