I couldn't fully tell if flat faced anthro's was either yay or nay so I hope you don't mind me putting a second option!
Halequin - White rabbit anthro, hand gestures can vary for this guy as he's pretty vocal with his hands, but holding scissors is always a good option for him. His nose commonly bleeds as just a small detail, not necessary but some people like drawing wiping bloody noses so just a thought!
(Second option if flat faced anthros aren't what you were implying to draw) Shortcake - A strawberry themed cow! For hand gestures nothings set in stone for them but probably something friendly!
