Now I'm going to explain my brisket-cooking as someone who has not done it other than on the grill, but knows that this is the superior way. You're going to need to use a smoker, and add a ton of dry rub. Then you let it sit room temp, before placing it in the smoker and letting the baby cook for 15 hours. OR if you want to get freaky, you can also cook it in the corned beef way, using the same cut of meat. Love me a versatile cut of meat.
