This might be cheating, because mostly it's just me referencing a song I like, but I have called my girlfriend "baby darling dollface honey" at least once before.
I also once called her "my dorest". Because she said, "I adore you, my dearest." So I said, "You endear me, my dorest. Dorest isn't a word, but I'm coining it right now. It means love of my gay life."

Sappiest nickname I've given? "Mi amor".
I've given the nickname to a significant other! It started out as a joke, because we were roleplaying and I have a Spanish, flirtatious, demonic character that we frequently use. Yet I stuck with it. It just had this... powerful meaning to me, and I can't exactly explain it. It sends shivers down my spine when I think about them, so whenever I refer to them as "mi amor", or simply "amor", it makes me think of so much more. Such as a cherry tree, or a rosebush... some really sappy, cliche things. But I just.. love them so much, its extremely hard to put into words >u<. They've been with me through so much hardship, and its crazy we've been childhood friends and have now been dating for over a year. Calling them "amor" is the least I could do for them.
