uhh uh this might be due to the dithering settings! depending on what program you're using to export your GIFs, you might be able to choose between different dither types
and also make sure you're using the higher color depth, GIFs are limited to 256 colors, so there'll always be some color loss, especially with gradients

Alternatively, you could try rendering it as an APNG (Animated PNG) which is a lossless format and will preserve the original quality, although not every site supports this format

simple backgrounds and simple shading might work better for that, and I might go try the APNG thingie and see how it goes then
